Caramelized Red Onion Chutney

Food is a big part of travel. Finding new flavours and recipes is great, especially if you can find a way to incorporate them into your life when you get back home.

I remember when I went to Greece many, many years ago and discovered Greek rice pudding. It was so delicious that when I got back home I went in search of a recipe for it. This was before Google and before the internet. I asked a Greek waiter if he had a recipe and he did give me one he said was his mother’s using vanilla sugar but it wasn’t quite right. I eventually found one in a Greek cookbook and have been making it at least once a year since.

On a recent trip to England I had some caramelized red onion chutney on top of smoked cheddar. Mmmmm. But once home I couldn’t find it here.  Even with Google and the internet, I could not find a recipe that was just right. Luckily I did find the list of ingredients from the website of the company that made the chutney. But of course not the proportions of the ingredients. However it did say that the red onions were 29% of the ingredients.

So I experimented last year before Christmas and managed to make some. While mine wasn’t exactly the same consistency, it was pretty close to the right flavour and proved to be popular. It’s all gone and it’s time to make some more. I’ll share the recipe after I’ve made this next batch and have worked out the details further.
